Recipe for Strawbie Cheesecake Cupcakes!

HAD to blog about these cos these were really the most delicious(and I don’t even use the word delicious. Ever.) cupcakes I’ve ever made.

Tons of strawberry cheesecake cupcakes online but I was really taken with this one. Fantastic layout and awesome pics. I was sold when she said, “Ladies, there’s only 3 recipes you’ll ever have to learn to win over any man’s heart: the perfectly seared steak, killer mashed potatoes and these Strawberry Cheesecake Cupcakes.” Haha

Mine are an adapted version of hers so if you care to read about how I did mine, here goes:

These are the ingredients I used.

For the crust:
15 Digestives crackers, crumbed
125g of butter(half a block or enough to make the Digestives crumbs stick when pressed down. 1.5 sticks in original recipe is too much, I used that and my 1st batch was crazy oily, oil leaked through my cupcake liners. Meh.)
3 tbs of sugar
For the batter:
4 egg whites and 2 tbs of sugar
1 tsp baking powder
0.5 tsp of sea salt
1.5 cups all-purpose flour
1 cup sugar
1 tsp vanilla extract
0.5 cup sour cream
2 cups fresh strawberries, hulled and diced
For the cream cheese frosting:
250g cream cheese
125g of butter
300g of confectioner’s sugar(original recipe is super sweet, so add till your desired taste la)
1 tsp vanilla extract

Preheat oven to 170 degrees Celsius. Then choose your cupcake liners! I chose the ladybird ones that my gf Joanne gave me! I think I saw them at Cold Storage HV, can try there!

Mix the Digestives crumbs and butter and sugar and put roughly a tablespoon of it in each cupcake. Use your fingers to pack it down. Bake in oven for 3-5 mins.

Beat the 4 egg whites and 2 tbs of sugar till stiff. Mine looks a bit overbeaten but it turned out fine. Original recipe says to be careful not to overbeat them. Set aside.

Mix the all-purpose flour, baking powder and salt salt. Set aside.

In another bowl, cream the butter and sugar until light and fluffy, then add the vanilla and beat with a hand mixer.  Then add half the flour mixture(pictured above) until incorporated then mix in the sour cream.  Add remaining flour and mix everything.

Gently fold 1/3 of the egg into the batter until combined, don’t over mix the egg whites or the cupcakes will fall flat. Add remaining egg whites.

Hull your strawbies! Read some awesome life hacks post and it taught me to hull strawbies using a straw!!! Just poke from bottom up to hull them and get rid of the leaves! No need for knives! SUPER genius!!! Then dice them up and fold into your cupcake batter.

Fill each cupcake about 3/4  and bake for about 20-25 minutes depending on your oven. I baked my 2nd batch for 25 mins, turned out better, pics further down this post!

Done! They will make your entire kitchen smell MAD YUMMY!

For the frosting, beat the cream cheese, butter and vanilla extract together. Add the confectioner’s sugar a bit at a time. Then beat till light and fluffy. Chill in fridge for an hour. And then you can start decorating your cupcakes! I added a thin slice of strawbie and more Digestive crumbs on top of mine!

All packed in a bento ready to be sent to the love. (Original recipe did say this recipe will win any man’s heart over! LOLOL)

My first batch which I ate instantly. These were baked for 20 mins, cooked but still a bit damp in the middle.

2nd batch, baked for 25 mins. PERFECT.

Now go win over YOUR man’s heart. Mine is already mine, especially after these cupcakes haha. X

    Chanced upon this & thought maybe you should note that the “angmoh”‘s 1 stick is actually just half a block of our butter. So 1.5sticks is actually just 3/4 block. Maybe that’s why your prev batch was oily. Hope that helps! )

  2. Hi kaykay! Im goin to bake this cheesecake later..I went thru ur method(at the batter side),u said cream the butter together with sugar rite?but u didn’t state how much the butter is..can u please email me the whole recipe again?? Thanks! <3

  3. Does tbs stands for tablespoon? For the batter, there isn’t butter stated in the recipe. I would like to bake this cupcake for my friend’s birthday. Can you please let me know how much is the butter supposed to be?
